Are you looking for a meal to celebrate St. Patrick’s Day or some Irish Heritage? Irish Chicken and Dumpling Stew is just what you need. This hearty meal will fill you up as we transition from the cooler weather. I am in love with this stew and I know that it will quickly become a favorite in your house, too!
4 cups water
2 can of cream of chicken soup
2 onions, diced
2 stalks celery- chopped
4 chicken breasts- cut into bite sized pieces
4 carrots- chopped
Can of peas
Salt and pepper to taste
3 cups baking mix (like Bisquick)
1 1/3 cup milk
In a soup pot, combine water, soup, onions, celery and chicken. Salt and pepper. Cover and cook for 2 hours, on low heat.
Add in carrots and potatoes and cook for another 30 minutes.
Add in canned peas, cooking for 10 more minutes.
While peas are cooking, prepare dumplings by combining milk and baking mix.
Bring stew to a boil, and drop dumplings by the spoonful into the stew. Reduce to simmer. Cover and cook for 10 minutes. Remove lid and cook another 10 minutes.
